Lime Snowflake Cookies
1 cup
granulated sugar
3/4 cup butter or margarine,
softened
1 teaspoon Key lime juice
1 egg
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
If
your butter is not softened place it in a microwaveable bowl and heat just until melted. Mix sugar with the butter, then add lime juice.
Break egg into sugar mix bowl, whip slightly to distribute egg white and yolk. Stir into "wet mix." Sift together and
add the three dry ingredients. Stir by hand
until a dough is formed. Place on waxed paper and chill until firm.
Heat
oven to 350 degrees F.
Roll chilled dough out
flat and 1/4-inch thick. Use cookie cutters to make shapes. For snowflakes, if you
dont have a special cutter, you can cut them freehand with a knife to make each a
little different. Dust with granulated sugar to make the cookies sparkle.
Bake cookies for about 11 to 13
minutes, or until edges just begin to turn light golden brown. Watch for over-baking. Cool
1 minute, and then remove from cookie sheet and place on a rack.
Makes
about 4 dozen cookies, but that depends on the size of cookie cutters. |
